Harvest 2023, we picked the first bunches of grapes from the vineyards of Roger which is situated in Falset, Priorat
The harvest normally takes place at the end of October/beginning of November. But due to a series of dry years and hot summers, the harvest currently takes place around mid-end September. All grapes are picked by hand and are put in crates of 20 kg, this to minimize the crushing of the grapes.
To prevent oxidation the grapes are brought to the bodega as quickly as possible. Here the grapes end up in stainless steel tanks and fermentation takes place at a controlled temperature of 25 degrees celsius.
The must and wine are continuously monitored and after about a month the selected cuvee is transfererred to 500 liter French oak barrels (3-5 years old).
Pas al Priorat has been in the barrels for 16 months (December 2021 - March 2023). Our wine was bottled in April and matured in the bottle for another 6 months before it was released in October 2023.
